Chocolate Almond Cookies

A light sugar coating on the outside of these cookies provides a crisp barrier that enhances the sweet almond flavor and slowly yields the chewy, chocolaty goodness inside!

1 cup (2 sticks) butter or margarine
1 cup sugar
1/2 tsp almond extract
1/2 tsp vanilla extract
1 egg

2 cups AP flour
1/2 cup cocoa powder
1/4 tsp baking soda
1/4 tsp baking powder
1/8 tsp salt

1 cup semi-sweet mini chocolate chips
additional sugar (about 1/2 to 1 cup)
slivered blanched almonds (about 1/4 cup)

Preheat oven to 350

Beat butter and sugar until light and fluffy. Add egg, almond extract, and vanilla extract. Beat well. In a separate bowl combine flour, cocoa, baking powder, baking soda, and salt. Add flour mixture gradually to butter mixture while mixing slowly. Stir in chocolate chips.

Shape dough into 1″ balls; roll in sugar. Place about 2″ apart on ungreased cookie sheet. Place 2-3 slivered almonds on each cookie ball and press down lightly.

Bake 10 minutes or until set. Let cool slightly before moving to wire rack. Makes about 3 1/2 dozen cookies.
